Ginger and lemon chicken

Ingredients
6 spring onions, sliced
2 garlic cloves, chopped
2 skinless chicken breasts, sliced
1 tsp prepared ginger
1 tbsp lemon juice
1 red pepper, finely sliced
½ Chinese cabbage, shredded
2 tbsps light soy sauce
Method
1. Preheat a non-stick wok until hot. Add the spring onion and garlic and brown lightly before adding the chicken. Move the chicken around the wok to seal the outside.
2. Add the ginger, lemon and pepper and cook for 1 minute before adding the cabbage and soy sauce. Check the chicken is cooked through. Pile into serving bowls and serve with rice and sweet chilli sauce.
