Lime scampi with tartare sauce

Ingredients
4 slices multigrain bread, made into breadcrumbs
1 tsp fine lime zest
2 tbsps polenta flour
1 egg, beaten
20 large peeled raw prawns
For the tartare sauce:
2 tbsps 3% fat natural yogurt
2 tbsps low-fat mayonnaise
Squeeze of lime juice
1 tbsp freshly chopped parsley
1 tbsp chopped capers
Salt and pepper, to taste
Method
1. Preheat the oven to 200C, 400F, Gas Mark 6. Place the breadcrumbs on a baking tray and toast in the oven for 10 minutes, then remove and mix in the lemon zest and polenta flour.
2. Meanwhile, place the beaten egg in a shallow dish. Rinse the prawns to remove any shell then dip into the egg and then the breadcrumbs and place on a baking tray. Bake in the oven for 10 minutes.
3. Combine all the sauce ingredients together in a bowl. Serve the scampi with a tossed mixed salad, the tartare sauce and low-fat chips.
