Roast turkey with gluten free sage & onion stuffing

Ingredients
1 whole turkey
For the stuffing:
1 onion, finely chopped
6 sage leaves
100g gluten free breadcrumbs
2 tbsps chopped parsley
1 tsp vegetable bouillon powder
Method
1. Dry-fry the onion in a preheated non-stick pan until soft.Spoon into a mixing bowl and mix in the remaining stuffing ingredients, adding a little boiling water and leave to cool.
2. Weigh the turkey and calculate the cooking time from the instructions given (allow 15 minutes per 450g plus and extra 20 minutes). Preheat the oven to 190C, 375F, Gas Mark 5.
3. Rinse the turkey well under running cold water and pat dry. Place the prepared stuffing at the neck end or under the skin folding the skin over to keep it in place.
4. Place the turkey on a wire rack over the roasting tin. Cover with foil and roast in the oven, basting occasionally with the juices.
5. When ready to serve, remove the turkey from the oven and check if it is cooked by inserting a skewer into the thickest part of the leg. The juices should run clear.
6. Allow to rest for 10 minutes before carving and serving.
